Roasted Chayote and Tomato with Spinach

Chayote is a wrinkly green vegetable that's pear shaped. It's delicious roasted and is packed with nutrients.

Ingredients:

  • Gafell Fettuccine made from Green Soybeans
  • Half a ripe tomato
  • Half a choyote
  • Baby spinach leaves
  • Garlic
  • Dried chilli flakes
  • Olive oil, salt and pepper

Perparing chayote:

Chayote has a kind of translucent sap that many people can feel stings the skin during perparation. To avoid this cut a 2 cm slice from the top of the chayote and rub this piece in circles against the top of the chayote for about 1 minute until the foaming stops.
